Although the Fish and Chips will traditionally be paired with beer, be sure that a perfect match can be found with wine also. Both iodic aromas from fish and the fried cooking require acidity to lighten the palate. Also the heavy taste of potatoes and the sweetness of tomato sauce appeal for a white wine that needs to be complex and rich even with a fresh acidity and citric notes.
