Cheeses can be pretty hard to pair with wine. In fact, the connoisseurs would pair each cheese with a different wine, but in order to stay simple, we have decided to devide cheeses in three categories, in function of the main aromas they have in common, to recommand a wine that matches. This category will regroup the blue cheeses including Stilton, Roquefort, Gorgonzola, and Danish Blue. They have a strong and sharp, peppery flavor which has to be balanced by a wine with a exceptionnal and strong expression, such as liquorish wines (Sauterne or Tokay), fortified wines (Port, Sherry, Banyuls, Maury) or a really strong-tasted red wine (Madiran or Amarone).
