Oily Fish

Oily fishes, such as salmon, tuna or trout, have a particularly strong taste and need for this reason a specific focus. The fat contained in their tissues emphasizes the taste of their flesh. A simple crispy wine would lack structure. To find a perfect balance we do recommend a more structured white wine, mainly barrel-aged and with a second fermentation.
