Description
The grapes are harvested mature, followed by a six hour maceration before a soft press. Using natural yeast only, the wine makes a spontaneous fermentation prior to a 12 months aging on fine lees in oak barrel

Aroma: Intense, white flowers, pear, apple, oak
Palate: Well-balanced, rich, full-bodied, black truffle, pear and under growth hints, fine tannins, mineral, structered body, good intensity, long length
Pairing: Scallop carpacio, Fish dishes, Pork filet mignon, Veal escalope, Panfried foie gras
